4-ingredient 150-calories BAGELS

Oh My! Pandemic made me do it! Calling ALL Bagel Lovers out there… So, there’s BC aka Before covid-19. And AC aka After covid-19. In BC times, I would not think twice about running in to the grocery store at least once a day to “grab something”. Now, 10 months and counting…. as pandemic times continues and no “back to normal” anytime soon as vaccines are rolling out for healthcare and front-line workers, teachers, 65+ folks — it’s amazing the SKILLZ (LOL!) that we’ve all developed along the way. Gotta look on the bright side of things, right?!!

So, per popular requests from my IG post/reel, here’s the recipe for the easiest and healthiest BAGEL so far, that I’ve tested and can vouch for HEHE!

Feel free to make it your own. For example, I sometimes add in garlic powder for homemade Garlic Bagels YUM! Or a handful of grated PARM for some cheesy Bagels Goodness YUMMMM! The sky is the limit. I think I’m gonna throw in some chopped JalapeƱo in my next batch.

INGREDIENTS

  • 1 cup unbleached organic All-Purpose (AP) flour
  • 2 tsp baking powder
  • 3/4 tsp kosher salt
  • 1 cup Greek Yoghurt
  • 1 (one) egg white, beaten
  • Everything But the Bagel seasoning

INSTRUCTIONS

Preheat oven to 375deg.F. Place 1 rack in middle and other rack on top highest notch in the oven.

Line baking sheet with parchment paper (and spray with oil) -or- if using silpat/silicone mat there’s no need to spray with oil

Combine FLOUR + BAKING POWDER + SALT.

ADD YOGHURT and mix with fork or spatula until well combined. It’ll look like small crumbles.

Lightly dust flour on clean work surface and KNEAD DOUGH until tacky, but not sticky. About 15 turns or so. NOTE: when you pull away, shouldn’t leave any dough on hands. If too sticky, keep sprinkling tsp of flour at a time until no longer sticky.

Divide into FOUR (4) equal balls. Roll each ball into 3/4-inch ropes and join ends to form bagels. –OR– if you’re like me, who likes to play with dough balls for fun hehe, just make a ball with each dough and poke a poke in the center, then slightly and carefully stretch. ===>>> Remember that no need to reach any bagel shape perfection here. Each bagel is like a snowflake, unique in itself! Just like you amazing and lovely unique human being YOU!

Okay, where were we? After shaping all your lovely bagels, gingerly hold a bagel in your left hand and brush with egg wash on both sides AND then sprinkle to your hearts content, as little or as much as you’d wish the seasoning of your choice. I LOVE LOVE LOVE TJ’s Everything But The Bagel — that I always have at least 1 backup jar in my pantry. God forbid I run out LOL!

BAKE for about 25mins. I usually start on the middle rack, then check on the bottom crust doneness about 10-15mins into baking. Depending on your oven, as all ovens behave different and have a mind of their own, if the bottom is browing too fast (aka getting burnt!) move tray to top rack — and keep checking every couple minutes for golden brown top of bagel baking on higher rack.

As soon as it’s done to your liking, remove and place on a cooking rack to cool down for about 15mins before cutting into bagels. I know. I know. The intoxicating smell of fresh baked bagel is hard to resist. I may or may not have torn into a hot out of the oven bagel and lathered in pure butter goodness.
